Pumpkin and cinnamon and sultana cakes

This afternoon at The Forbury was great fun!..Peggy, Susan, Hilda, Colleen, Raymond and Tony concocted pumpkin cakes from a new un-tested recipe in the run up to Halloween night.  Trixie had helped with hollowing out a pumpkin the day before and the flesh looked good for consumption.  Marius applied his excellent DIY skills and sorted everything out!  with really delicious results.. photo 1_edited photo 3_edited photo 2photo 4_edited

Pumpkin, Cinnamon and Sultana cakes recipe

200g margarine

200g light brown sugar

4 large eggs

300g self raising flour

3 teaspoons cinnamon

zest of orange juice

175g sultanas

500g pumpkin flesh

♦ beat the margarine and sugar together until fluffy

♦ beat the eggs and add to the mix gradually

♦ mash the pumpkin and then beat into the mixture slowly

♦ mix in the sultanas and orange zest

♦ gradually add flour and cinnamon to the mixture.

♦ spoon into a 30cm X 20cm cake tin, lined with paper

♦ bake at 160ºc for 30 minutes

    It was a great day of fun and tasty pleasures. So good I think The Forbury should create it’s own cook book and take Mary Berry on. I’m sure Colleen and Hilda could lead the way!
